Who knew the humble tortilla wrap made such a good pizza base? Well, probably everyone except us in the O’D household. It’s a revelation. While I enjoy making my own pizza bases, let’s be honest, with three small O’D’s and the never ending mountain of washing, anything to save time is a good idea. So, we have embraced the wrapizza!
This weekend I had all the ingredients for my ultimate pizza.
The FANTASIA

Ingredients:
1 x wrap (any size really)
tomato puree / pizza sauce
grated mozzarella
brie cheese (sliced)
1 x medium onion
sesame seeds
olive oil
mixed herbs
Method:
Firstly, you need to caremelise your onion. Put a heavy pan on the stove and heat up some olive oil. Finely slice the peeled onion and add to the pan. Stir to cover with the oil and turn the temperature down. Let the onion slowly cook. You can add a teaspoon of sugar if you like your caramelised onions a bit sweeter. The onion needs about 30 mins at low temp so they are glassy and soft. Preheat your oven to 180 (fan).
Lay out your wrap on a baking sheet, drizzle over some olive oil and a pinch of mixed herbs. Using the back of a spoon, spread this evenly across the wrap. Next add your tomato puree / pizza sauce and spread evenly. Sprinkle on your cheese so the base is well covered.
Place your thin slices of brie evenly over the wrap and then add the caramelised onions so the wrap is well covered. Sprinkle the sesame seeds generously over the top of everything and bake in the oven for 6-8 mins.
Enjoy! This is practically guilt-free pizza eating as the base is sooooo thin. Lovely.

- It was COD’s birthday this past weekend and we went to Thompson’s for dinner. It’s hard to describe to mainlanders how exciting this sort of gastronomic treat is on the Island but I can only describe this fantastic foody evening as akin to a great night at Chez Bruce. Just plain brilliant in every way. Save your pennies Islanders – it’s not cheap but it’s worth it
- Nelson the Bear came home from school for the weekend for two days of parental torture. Sure, it was fun the first time round but everyone lost interest quickly this time and we forgot to do pretty much everything with him. I must thank the enthusiastic mum who made him a new pair or pants as this led to a request to make a new top (yay, like I need to sew for a bear). We refashioned a babygro and got out some felt-tips.
